The extractor would probably be the solution I would try. Sure, not cheap but also not expensive and less than a soundcard!
And no optical channel splitting with compatibility issues etc.

The only issue might be that you can't use vrr if you're using a gsync/freesync display?
 
I had previously bought an Audigy sound card that had an optical output in the mistaken belief that it was able to output the surround sound from my PC to the Denon AV Amp and so give me surround sound for my sim games. It turns out that while it had the optical output, it wasn't compatible and so I wasted my money.
Just a wild guess.
I have seen such discussion about missing digital output in different forums.
Its not only involving Creative cards but also some others.
Its about enabling "Stereo mix to digital output".
If this setting is not enabled then even a correct connected digital (like optical) output is dead.
Maybe your original Audigy had this too.

It also likely removes/circumvents HDCP, so you won't be able to play any content that requires it on your PC
 
Thanks, but I still need some hardware that has the optical out as the motherboard doesn't have it - it has an HDMI connection but this is non functional with the 3070 card, plus of course it would still give the ghost monitor issue

You can enable the iGPU (and its HDMI) to work alongside the 3070 in BIOS.
