Anyone using ETS2 w/two monitors?

I don't have three monitors but I do have two. Is it possible to set up ETS2 so that the normal single screen display (w/steering wheel & left side mirror) is on the left monitor, while the right monitor displays the right side of the cab w/right side mirror?

I see lots of triple-screen users/tutorials but not much regarding just two as described above. Just wondering if I could see the whole dash and both side mirrors spread across two monitors without it looking stretched or squished.
