Cockpit Build Questions and advice

Hi guys im Andrew. Im looking to build me a cockpit. Sprint car cockpit. I have a old frame that is just the cockpit. Just need to figure out pedals and steering wheels, and what I will do for a pad for mouse and key board. Plan is to run triple screens, and I will have a full containment seat.
I do know steering wheel will have to have a quick release to make getting in and out easier. I added a pic of my starting point. any advice would be helpful.
