Favorite Sim/Track/Car Combo For Hotlapping and/or Racing the AI?

I'm not as serious about simming as I once was, so at this point I'm mostly interested in hotlapping and/or racing against AI. I'm also not interested in developing set-ups, since I have limited time and never got the hang of it anyway. I just want to sit down for either a quick 30 minutes of racing or hotlapping.

So I'd appreciate which sim, track and car you choose when hotlapping or racing the AI? What's your combo of choice?

Over the past 3 months I have only been playing offline against the AI in AMS2. My #1 go-to is the C8R (I so wish there was a C7) at Brands Hatch, with Oulton Park a close second and Bathurst when I am feeling a little masochistic. I race in VR and still really enjoy the elevation changes on all those tracks, but Brands is definitely my favourite
