Graphics settings for Triple 1440p's on a 3070

Hi Guys, relatively new to Sim Racing.... I am need of some advice if possible.
I have just purchased Triple 32' Widescreen 1440p monitors for a steal and am running a RTX 3070 Founders with a Ryzen 5 5600. I have found myself out of my depth regarding the Tech side as I have always been a console gamer.
I managed to get the screens set-up and running but the game and graphics seem all over the place even on Mid/low settings,

Can anyone advise on settings for ACC to get the best out of this set-up???
