How to change a car's model, while keeping its physics, setup, sound, etc

If you're lucky it's easy, if not, probably too complicated to explain. The kn5 file contains all the graphical info, and you can sometimes swap them between cars without messing anything up. Just use the original filename, ie. if a car started with ferrari_f138_a.kn5, you need to name the new model that exact thing.

There are a lot of data-defined object names, if those happen to be identical between the models it'll mostly work (digital dash may get messed up), if they don't exist then you're screwed. Kunos uses fairly consistent names but if the cars started with different features it may not be possible.

If that first step does work you'll also want to copy driver_base_pos.knh, and the animations folder, from the car you want visuals of.

It is extremely likely the tires will not line up when doing this, and for "an easy way" that is unfixable. But most open-wheelers use tire animations that should sort of deal with that.
