Sorry as I'm sure it's been asked before but when I use cockpit with hands and wheel, the wheel only turns 90 degrees each way.

Yeah, thats normal, just turn of the Hands and its fine.
I know but I see other people with hands and it seems ok

I think it depends in the car, but I´m not sure, I just turned them off.

Hey Jim, that's because most of the newer cars use a revised driver model that supports wheel rotation higher than 90 degrees. Most of the open wheeler support this feature while most the of GTs and Prototypes do not.
In controller options set match to steering setup....first or second slider from the top. Once set to that it will match your steering wheel rotation to the onscreen visual wheel
You also need the option of wheen rotation set to automatic
Wheel profile: 900
In game controller options
Wheel rotation: automatic
Match wheel rotation
Wheen set to 900 and using automatic rotation the game will change your overall wheel rotation from car to car based on its specs.
If you feel its not enough rotation for a certain car go to car setup/steering setting and you can change the rotation.....on screen will/should match your real wheel
