I started making an app to virtually try out screen layouts with initial focus on sim racing triples. Let me know if you find it interesting or have any suggestions for improvements.

What did you use to create it?
And is there a reason for the centre screen being narrower than the side ones?

I made it in my web browser using the Glitch app dev/hosting service and the Three.js JavaScript library.
The centre screen is actually the same size as the others - its just the perspective effect.
The effect might be slightly exaggerated by the FoV I'm using (75) so I might try to tweak that.
I always think the same when I see real triples (in videos) so maybe its not a bad thing.

Well I did wonder if that was the case, so I rotated them all to be parallel and the effect persisted; I now realise though that I did that from the driver's seat so they probably weren't in the same plane. Doh.

Top down view might be best to check if they are lined up correctly.
Also you can move the camera around with the right mouse button or two finger drag in most views - apart from the driver seat.
