Every time you use installer made by Unity Assets Bundle Extractor, it makes backup files to mysummercar_Data/ -folder. They are named like "sharedassets1.assets.bak0000", the number depends on how many mods you have installed.

Delete (or copy to elsewhere) the "shaderassets1.assets" and "shaderassets2.assets" -file, and rename "sharedassets1.assets.bak0000" and "sharedassets2.assets.bak0000" to their original name. You can also use Steam to verify game cache and download those again, or the whole game to be sure that's fresh install.

Also note that savefiles made with that mod will still contain the scoop, because MSC saves the car mesh fully to savefile. If that's the case and you want keep the save, you can probably fix it by taking the hood to the repair. But i haven't tried that.

EDIT: You can also delete the meshsave.txt from your savefiles folder, but please note that also repairs your car damage also.
