If I have to choose 1, it's gotta be Spa-Francorchamps.

Suzuka, real challenge at the Esses, the Degners, the Spoon, 130R, the chicane, a real challenge (Not that Spa isn't)

But, it can't produce good races unless it has rained at some point. Spa can create awesome dry races.
