Is there any mod i can use for adding more information on the steering wheel dashboard?
Because i saw a television show where they used this car, but with a complete other dashboard which showed current gear and stuff as well...

Unfortunately. These use a different mod. Not the ones from RSS.

Search for the ACFL F1 mod that Ziggo uses
if your on the site you can change the French language (top left corner)

Do they run on default setup?

Dont know, all I know they run not on hard tyres and a full tank

(sorry Dutch spoken) but you only have to see Beitske her lap
she did one before in this show a 1:14 but they discover she was on full tank and hard tires
so got another shot but no info on what setup
