Looking at real racing there I more or less always a safety car, and it brings a new level of tactics and race craft to racing that is sometimes miss in simulations.

Whether it would be boring and just annoying after a wile its hard to say.

a safety car option that you can turn off or on before each race. the safety car is good for undercutting and pit stops

You can't call it a racing simulator without full course yellows and safety cars, since so many series have them. A must have indeed!
