Sim racing hardware and polling rate

I think I may remember a thread on this topic from some time ago, but I can't find it anywhere and I cannot remember what the conclusion was.

I've been looking at gaming mice, and I notice the default USB polling rate is 125Hz, which equates to roughly 8ms of input lag. Pretty much every gaming mouse manufacturer offers various solutions to alter USB polling rate to either 500Hz or 1000Hz, most commonly through the driver software. Theoretically decreasing lag to 2ms and 1ms respectively.

Now I know in a quest to reduce lag some sim racers do some pretty crazy stuff. I even remember someone setting a high speed camera to record his driving to help dial in the settings for the least lag.

So has anyone here experimented with altering the default polling rate for their USB driven wheels/pedals in an attempt to gain that extra edge? 5-7ms is a small gain I know, rationally speaking it's probably not even worth it, but still something to think about maybe.
