i learnt that real drivers use low sensitivity something like 30:1 wheel lock ratio
i use 10:1, 200º at my g25 and 21º lock in game with the sensitivity increased at 100%
i read once in a motorbike magazine that when in an accident situation the bike brakes and turns more than you think
so this is the high sensitivity advantage that you make it turn more than you really dare, not to mention practical faster reaction time for you have to turn the wheel less than if you had lower sensitivity
