This might be dumb, but can you use 2 screens?

So I have a 2 screen set up at the moment and when I race, just use two. I know a 3 screen setup gives you the correct angles and this would essentially answer the question as 2 only gives either the centre and left or right view.

With using a Fredde IKEA desk I have two screens but no room for a third, or I could upgrade to a larger single curved screen.

The monitor/s are also my work space when I am not in the office. I also do music recording so have my mix console on one and tracks on the other. As well as non racing games.

In theory you can, but not from the game settings. You would have to use your video card driver software to combine the two monitors. I'm not too familiar with nVidia, but AMD has something called Eyefinity which will combine the monitors into one, and then you select the matching resolution from the game to use it. The option is at the bottom of the Display section in the AMD Radeon software. You can get there from Settings->Display, or Gaming->Games->Global Display.

For example, two 2560 x 1440 displays would translate to 5120 x 1440 inside the game. I suspect the bezel dead center between the two screens might make you go cross-eyed though. I tried this years ago in World of Warcraft and it was pretty annoying.
 
To solve the center bezel problem:

Ingame options:

-select display to Windowed Mode, with borders.

-choose or edit a custom resolution of x3 your monitor width resolution, and keep the same original height.

-if not possible to choose or edit resolution, just grab a Window's border an strech It to reach the desired resolution.

-grab the Window and move to correcto position, center the ingame wheel with your primary display.

- when all done, change the window to borderless if possible
