Does it work for anyone, not sure what I am doing wrong, but it just doesn't save any settings from Triple screen menu.

So not fixed yet until now? I've been using triple screens since last year (1080p), and some fields didn't seem to save. If I recall correctly, these are the steps I performed:
1. Set it up in-game. Had some glitches, like some values not saving. So exit game, then...
2. Edit the triplescreensettings.xml file, check the 3 lines at the bottom to see how they correspond to your setup, and edit accordingly. This is my file:

Hope this helps. I believe many suggested before to copy PC2 version of the file, and it would work too.... but not everyone has PC2. Hope this helps.

Thanks, I have found that file, but all my editing to it are just ignored in game, I still have mirrors stretched on ultra-wide monitor.
Will try to mess more, does anyone actually have it working with the current version?

Oh, perhaps there might be some further glitch with non-conventionally sized monitors? Mine's just plain 16:9, 1080p.

So it works for you?
Don't know, I entered all properly calculated sizes based on ultrawide split in 3 virtual screens, same numbers I've used with AC, R3E and ACC. The other titles work, this one just ignores it, side mirrors are still stretched as on single monitor.
Thanks for trying to help, may be it is ultrawide issue. :unsure:
