UI in VR

Is there a way that I can move the UI further away in VR? It is right on top of me.

Nope and that's a problem when you move your seat forward.

If you save your seating position using the app, the UI will adjust to the new default seating position next time you use that specific car. Also, changing your monitor resolution will change the size of the UI. It won't effect your headset in anyway though.

Consider trying my settings too. I think messing with the last coordinate of "First person HUD offset" will give you the result you desire. I've settled for 0,0,0.3, but you may find other values to work better for you. Change that value in increments of 0.1 (i.e.: try 0.1, 0.2, 0.3, etc.).

You need Custom Shader's Patch version 1.74, or higher.
