After the latest update I tweaked my gamepad settings a little and finding the following are pretty good.
It's the balance between the steering sensitivity and the deadzone which is key to avoiding the dreading ping pong effect, combined with some hand discipline and practice.
Just duplicate for Steer right with sensitivity/deadzone and ditto for the brake.
