Desktop and VR

I just bought the HTC Vive Pro for sim racing. First off, to say I am impressed is the understatement of the century. But.....

I am struggling to get to grips with how to go between the screen and VR set up. How does everyone do it? I am assuming people just load up the games using the 2D monitor and then when the car is on the track they put the headset on. Any other ways people are doing it? I would like to be in VR all the time but it's hard to use the keyboard and do the behind the basic work within Windows.
 
What games/sims are you using?
AC requires you to set it up from your monitor and only goes into VR when you enter the car.
Dirt Rally and Pcars2 allow you to use the menus from within the game.
That's the way I do it.
