Even though I then tend to make a bathplugging huge mistake if any of those stages are in the rally, because I'm so used to them, that I think I can push much harder

Strangely enough, that is exactly my experience. If I practice a Rally Stage a few times, I always get worse results (or crash) because I find myself trying to drive from memory, rather than listening closely to the co-driver.
Also, similar to Alasdair, I found excessive practice caused a quick burn out and I rapidly lost interest.
