So many of us have cars that only have a handful of skins. When setting up a race, if more AI opponents are selected than the number of available skins, have a script automatically assign a base color and number to the extra cars.
A screen could pop up before the race, asking you to pick specific colors, numbers, fonts, number-plate shapes, etc for the extra cars. I imagine something similar to the Content Manager's showroom UI. This creates more immersion during single-model races. It would also decrease the size of the content folder which is always a plus.
