I know there is a lot going on but has anyone thought about any club nights for this considering how popular the game is. The online I've tried seems pretty stable.

Unless F1 2016 has dedicated servers, it's mostly out of our hands hosting Club Races. You can organize among yourselves of course.
Would love to but I'm going to be on business in HK for another couple of months and won't have access to my PC...
